What says fall more than brussels sprouts and maple syrup? This is a fantastic side dish for an autumnal gathering like Thanksgiving. Add chopped almonds (or your favorite nut) for some crunch.
Ingredients:
1 pound brussels sprouts, halved
2 tablespoons olive oil
2 tablespoons maple syrup
2 tablespoons balsamic vinegar
Salt and pepper to taste
½ cup chopped almonds (optional)
Instructions:
Preheat the oven to 400°F
Mix together balsamic vinegar and maple syrup in a bowl and set aside
Trim the ends off the brussels sprouts and cut them in half
Toss the brussels sprouts with olive oil, salt, and pepper to coat in a mixing bowl.
Spread the brussels sprouts across a large baking sheet in a single layer with the cut-side down
Roast the brussels sprouts for 20 - 25 minutes
Remove from the oven and apply the maple-balsamic mixture. You can use a pastry brush or slowly drizzle and toss with a spoon to ensure fully coated
If you are adding nuts, sprinkle them on the tray atop the brussels sprouts
Place the baking tray back in the oven for 5 - 10 minutes, until roasted to your desire
Yields 4 servings (as a side dish)
