Maple-Balsamic Roasted Brussels Sprouts

What says fall more than brussels sprouts and maple syrup? This is a fantastic side dish for an autumnal gathering like Thanksgiving. Add chopped almonds (or your favorite nut) for some crunch.

Ingredients:

  • 1 pound brussels sprouts, halved

  • 2 tablespoons olive oil

  • 2 tablespoons maple syrup

  • 2 tablespoons balsamic vinegar

  • Salt and pepper to taste

  • ½ cup chopped almonds (optional)

Instructions:

  1. Preheat the oven to 400°F

  2. Mix together balsamic vinegar and maple syrup in a bowl and set aside

  3. Trim the ends off the brussels sprouts and cut them in half

  4. Toss the brussels sprouts with olive oil, salt, and pepper to coat in a mixing bowl.

  5. Spread the brussels sprouts across a large baking sheet in a single layer with the cut-side down

  6. Roast the brussels sprouts for 20 - 25 minutes

  7. Remove from the oven and apply the maple-balsamic mixture. You can use a pastry brush or slowly drizzle and toss with a spoon to ensure fully coated

  8. If you are adding nuts, sprinkle them on the tray atop the brussels sprouts

  9. Place the baking tray back in the oven for 5 - 10 minutes, until roasted to your desire

Yields 4 servings (as a side dish)
