Kale Summer Salad

Salad Ingredients:

  • 4 cups kale, chopped

  • 2/3 cup walnuts, chopped (can substitute for almonds, pecans, etc.)

  • 1 teaspoon olive oil

  • 1 cup fresh blueberries

  • 2 ounces feta cheese crumbles

Dressing Ingredients: 

  • 5 tablespoons olive oil 

  • 3 tablespoons balsamic vinegar 

  • 1 tablespoon maple syrup

Instructions: 

  1. Wash the kale, cut out the stems, and chop into bite sized pieces

  2. Massage the kale in a large serving bowl with 1 teaspoon of olive oil. Set aside.

  3. To make the dressing, add all dressing ingredients to a bowl and whisk

  4. In your serving bowl, assemble the salad: put kale into a serving bowl, top with blueberries, walnuts, and feta cheese. Pour dressing over top and toss to coat

  5. Add freshly ground black pepper and sea salt, if desired, and serve
