Salad Ingredients:
4 cups kale, chopped
2/3 cup walnuts, chopped (can substitute for almonds, pecans, etc.)
1 teaspoon olive oil
1 cup fresh blueberries
2 ounces feta cheese crumbles
Dressing Ingredients:
5 tablespoons olive oil
3 tablespoons balsamic vinegar
1 tablespoon maple syrup
Instructions:
Wash the kale, cut out the stems, and chop into bite sized pieces
Massage the kale in a large serving bowl with 1 teaspoon of olive oil. Set aside.
To make the dressing, add all dressing ingredients to a bowl and whisk
In your serving bowl, assemble the salad: put kale into a serving bowl, top with blueberries, walnuts, and feta cheese. Pour dressing over top and toss to coat
